  • Tomato Puree: Made by straining cooked tomatoes to remove skins and seeds, and slightly concentrating the liquid to a pourable, smooth consistency (typically 8°–14° Brix). It retains a fresh-cooked flavor profile and is ready to use as a direct liquid base.

  • Tomato Paste: Cooked for an extended period and heavily evaporated under a vacuum to remove bulk water weight, resulting in a thick, semi-solid concentrate (typically 28°–36° Brix). It delivers highly concentrated flavor, deep umami, and structural density.

This is the most critical technical distinction for food formulators, determined by the temperature used during the initial milling process:

  • Hot Break Paste: The tomatoes are rapidly heated to ultra-high temperatures immediately upon crushing. This deactivates the fruit’s native enzymes, preserving the natural long-chain pectin polymers. The result is a remarkably thick paste with high water-binding capacity.
