Grown only on the Atlantic Coast of Colombia, the Magdalena River Mango® does not contain preservative substances, colorings, artificial flavors or other additives. Its flavor is rich and aromatic. They are all fully ripe mangoes, yielding a very homogenous product from the beginning to the end of the harvest. This product exhibits the typical characteristics of those obtained from healthy, naturally ripe fresh fruits. The Product is free of defects and has very good color, flavor and aroma. It is free of residual skin particles and other foreign materials. The flavor is characteristic of ripe Magdalena River Mango.®

Because mangoes naturally yield a highly viscous pulp, industrial NFC juice is typically a partially clarified, free-flowing liquid that retains the delicate, authentic flavor profile, rich yellow-orange carotenoid pigments, and nutritional integrity of the fresh harvest. Continuous cold-chain logistics and specialized refrigerated storage to prevent browning and flavor degradation are required.

It is typically standardized to a thick, highly stable syrup ranging (brix range from 28-65 depending on the level of clarification and de-pulping). Dehydration drastically reduces shipping weight and volume, significantly slashing international freight costs from equatorial growing regions. It is highly shelf-stable and can be transported and stored without expensive freezing.

Mango possesses an incredibly complex aroma profile made up of volatile esters. When mango juice is concentrated, these highly volatile top-notes are the first to evaporate. Industrial processors use an essence-recovery system to capture and condense these vapors into Mango Essence—a crystal-clear, water-soluble, ultra-potent liquid fraction. Completely free of sugars, acids, or colors. It is highly volatile and engineered to restore the authentic, “fresh-cut mango” aromatic profile.

More About Mango Formats

Mangoes naturally contain high levels of insoluble solids, starches, and long-chain pectins, which create a thick, heavy puree rather than a free-flowing juice. If you try to run raw mango through standard beverage packaging lines designed for thin liquids, you will experience severe clogging, line pressure spikes, and rapid sedimentation (settling) in the finished bottle.

To create clean, clear beverages or seltzers, R&D and procurement teams must specify de-pulped and enzymatically clarified mango juice formats. During processing, pectinase and amylase enzymes are introduced to break down the natural pectins and starches. The liquid is then run through ultrafiltration. This removes the cloud-inducing fibers while keeping the soluble fruit sugars, leaving you with a free-flowing liquid that can be concentrated without turning into a solid gel.

Standard mango flavorings are often synthetic duplications or blended “natural flavors” built from non-mango botanical sources. Mango Essence, on the other hand, is a 100% pure physical byproduct of the juice evaporation process. It is captured by running the steam from the evaporator through a distillation column, concentrating the volatile fruit esters into a clear, water-soluble liquid.

For strict clean-label certifications (like Whole Foods compliant or Organic), using a standard flavor chemical can require complicated ingredient declarations. Mango Essence allows you to add intense, authentic “fresh-sliced mango” aroma to clear beverages, seltzers, or RTD teas while declaring it simply as “Mango Essence” or “Natural Mango Flavor” on the deck. Because it is completely water-soluble and contains zero sugars, acids, or colors, it leaves no residue or cloudiness in the tank.

Mango Oil is extracted from the seed kernel inside the rigid mango pit, a byproduct that used to be discarded as agricultural waste. Chemically, it is a triacylglycerol fat rich in stearic and oleic acids, giving it a physical profile that almost perfectly mirrors premium cocoa butter.

  • In chocolate, it behaves as a highly compatible Cocoa Butter Equivalent (CBE). It has a sharp, clean melting point right at human body temperature, meaning it remains hard and snap-able at room temperature but melts instantly in the mouth without feeling waxy.

  • In plant-based meats or fats, it acts as an excellent, non-hydrogenated, palm-oil alternative. It provides the smooth mouthfeel and clean release necessary for premium vegan spreads, margarines, and bakery shorts without bringing any competing “fruity” mango flavors to the savory or neutral matrix.

Mangoes are packed with polyphenols and active enzymes (like polyphenol oxidase), making them highly susceptible to enzymatic browning and oxidative flavor deterioration when exposed to heat and oxygen.

  • Mango NFC Juice undergoes minimal, gentle heat treatment to preserve its raw flavor, but this means its shelf life is short and completely dependent on an uninterrupted cold chain (frozen or refrigerated). If the temperature spikes during transit, the natural carotenoid pigments will rapidly brown, and the flavor will turn cooked or oxidized.

  • Mango Juice Concentrate goes through rigorous vacuum evaporation which deactivates these browning enzymes. The high sugar concentration (high osmotic pressure) makes it incredibly stable, allowing it to be stored at ambient or standard chilled temperatures for extended periods without losing its bright yellow-orange color profile.
