Guavas naturally contain high levels of insoluble stone cells (sclereids), which create a unique gritty, pear-like texture in the raw pulp. If you try to run un-refined guava puree through high-speed commercial filling lines, you will face severe mechanical hurdles, including nozzle clogging, line pressure spikes, and rapid sediment settling in the finished package.

To manage this, R&D and procurement teams must specify the exact finishing mesh size during sourcing. Standard purees are passed through a industrial finisher to remove the seeds and larger stone cells, leaving behind a smooth, micro-finished liquid. For ultra-smooth applications like premium beverages or dairy formulas, lines introduce specialized enzymatic treatments (pectinases) followed by fine-mesh centrifuging. This alters the fiber matrix to ensure a free-flowing, stable liquid that delivers a velvety mouthfeel without causing separation or line downtime.

The choice between single-strength and concentrate comes down to your formula’s water budget and shipping economics. Single-strength guava puree contains its native water content, preserving the absolute freshest tropical aroma and a highly fluid, workable viscosity.

Conversely, Guava Puree Concentrate is a heavy, desugared paste produced via low-temperature vacuum evaporation. R&D teams utilize the concentrate when a formulation requires intense guava solids, rich color, and natural pectin binding power without introducing excess moisture. It serves as an excellent natural humectant and structural binder in low-moisture snack matrices where water activity must be kept low to prevent mold or moisture migration. This ensures they survive the mechanical shear of paddles or extruders, retaining their geometric integrity during subsequent flash-freezing or par-baking processes.
