Pears naturally develop clusters of hard stone cells (sclereids) made of lignin and cellulose as they ripen. If you attempt to pump raw, coarse pear puree through automated, high-speed beverage packaging lines or low-clearance depositor nozzles, you will experience severe mechanical clogging, line pressure spikes, and an unappealing, gritty “sand-like” texture in the finished product.

To bypass this quality hurdle, R&D and processing teams must specify micro-finished or de-gritted pear purees during the sourcing phase. In the processing plant, the steamed pear pulp is forced through multi-stage industrial finishers equipped with ultra-fine screens. This mechanical shear isolates and removes the abrasive stone cell aggregates, transforming the dense pulp into a perfectly velvety, free-flowing liquid matrix that maintains excellent stability and line performance without causing downtime or consumer complaints over texture.
