More About Apple Formats

The primary differences lie in the processing method, flavor profile, and logistics:

  • Apple NFC Juice: Squeezed directly from fresh apples, gently pasteurized, and packaged. It retains the authentic, nuanced flavor profile and aroma of fresh fruit. It is ideal for premium, clean-label beverages where a “closest-to-nature” profile is required.

  • Apple Juice Concentrate: Produced by evaporating the natural water content under a vacuum to around 70° Brix. This creates a highly stable, compact product that significantly reduces shipping and storage costs. It is widely used as a natural sweetener, color-standardized base, or cost-effective building block for juices and sauces.

The difference comes down to viscosity management, water activity and shipping requirements.

  • Apple Puree is single-strength, meaning the fruit is steamed and milled without moisture removal. It provides maximum natural hydration and excellent fresh-fruit cell structure to foods.

  • Apple Puree Concentrate has a significant portion of its native water evaporated under a vacuum. This creates a highly concentrated paste.

Apple puree concentrate drastically reduces your shipping and cold-storage footprint. However, because it is incredibly dense, it requires specialized high-viscosity pumping equipment (like positive displacement pumps) to handle on the factory floor. It is perfect for formulations where you need intense apple solids and binding power without adding excess water to the batch matrix.

Apple IQF focus entirely on structural particulate integrity. Instead of being crushed, fresh apples are washed, peeled, cored, diced or sliced, and passed through a blast-freezing tunnel so individual pieces do not aggregate.

While purees dissolve into a matrix to act as binders or humectants, IQF apples are used when the consumer needs to see and bite into distinct, intact pieces of fruit. They are engineered to survive structural shear during industrial mixing and retain their geometry during high-heat baking or retort processing.

Apple Essence (also known as aroma) is a highly concentrated, clear liquid captured during the juice evaporation process. When apples are heated to make concentrate, the highly volatile flavor and aroma compounds evaporate first. We capture, condense, and fractionate these vapors into a pure, potent essence.

  • It is added back to juice concentrates to restore their fresh-picked flavor profile, or used independently as a natural flavoring agent in sparkling waters, seltzers, spirits, and cosmetics.
